Wood-fire grilling and ingredients at a rural grill house in Axpe, between Bilbao and San Sebastián, run by Bittor Arginzoniz since 1990. It was second in 2024 and 2025 and in 2026 is the best restaurant in the world, the first in the Basque Country to get there; its aged-cow chuletón and house-made chorizo stand out. Arginzoniz admits nobody on his team will take over the grills.
